How impressive is it to watch a confident cook chop an onion? You probably think ot yourself, how do they not lose a finger? If you look closely, you’ll notice they are focused but relaxed. Calm hand, calm knife, equals fast result. Most home cooks are doing the opposite: a death grip on the handle, a hunched shoulder, and they are using a knife that’s been banging around in a drawer and is duller than a spoon.

Three cuts and one grip fix most of this.
